VAST is a beautiful, 179-seat restaurant and bar with multiple private dining rooms, including a Chef's Table and Lounge, situated on the 49th floor of Devon Energy Center. Kurt and his team of professionals are building on the restaurant's success over the past two years and taking Vast to the next level. By using local producers to add a more regional flair, Kurt believes Vast will become the dining gem of Oklahoma City.
Enis Mullaliu was born and raised in Kosovo. He left home at 16 and lived in various countries throughout Europe, including Austria, Germany and the United Kingdom, before he moved to the U.S. at 18 to join his parents and follow the American Dream. Shortly after, he started working at the Pepperoni Grill, a locally owned upscale bistro featuring entirely house-made Italian cuisine in Edmond. He worked there for four years while he pursued his bachelor?s degree in criminal justice and minor in business at the University of Central Oklahoma.
His defining opportunity in the food industry came after graduation, when he joined Chef Kurt Fleischfresser at The Coach House, a premier fine dining restaurant and the only AAA Four Diamond rated restaurant in Oklahoma City. He worked there for nine years, before he helped open The George prime steakhouse in 2013. In addition to his role as the house manager/maître d?, he also assisted with construction, created the training manual and trained the front-of-house staff.
He brings to Vast a high level of expertise regarding training, experience and knowledge of fine dining standards. His expectations for Vast are very simple: Be the best restaurant that offers the best service, best food and best atmosphere, and make people feel comfortable.
Outside of work, he enjoys eating, drinking wine, running, cooking, and watching and playing soccer. He runs two marathons every year; one is the Oklahoma City Memorial Marathon. His native tongue is Albanian, and he speaks four languages.
Chef Patrick is a Kansas native who grew up in Leavenworth, where he took an avid interest in cooking from his paternal grandmother. A block from his childhood home stood a fine dining restaurant in an old Victorian home, and he would often wonder what was served there.
While attending Kansas State University in the early 1990s, Chef Patrick worked at a local fine dining restaurant. He started as a steward and worked his way through the ranks to Sous Chef. During that year, he realized that his heart was in the culinary world. As Chef Patrick looked to expand his passion, a move back to the Kansas City, KS, area was well-timed for what proved to be a powerful growth period for dining in the area. During his time there, Chef Patrick honed his skills by working with three James Beard Foundation Award-winning Chefs, who helped to sharpen his skills and guide his passion for producing great food. His career in Kansas City included several years as Sous Chef at The American Restaurant and as Executive Chef for Pierpont's at Union Station.
Patrick is excited to be at Vast and grateful for his opportunity to explore his cuisine with flavors and ingredients from the region, prepared in a way that speaks to his culinary upbringing in the Midwest.
